In this presentation, Rob Ontell, a hospitality attorney with Michelman & Robinson, LLP, will examine how New York City’s efforts to go to a zero-waste-landfill may impact the way restaurants, hotels and other food-related businesses handle organic waste. Recently enacted legislation requires a significant number of the city’s hotels, arenas, food manufacturers and wholesalers to compost food scraps. Mayor DeBlasio has stated that he plans to expand the legislation to require all food service businesses to compost food scraps in the near future. Rob will review legal issues to be aware of when preparing to comply with the city’s new rules and explore operational and cost concerns due to these new requirements.
